Biryani is an Indian based rice dish that combines a saucy meat curry with cooked basmati rice and whole spices. My tasty chicken version is flavored with bay leaf, cinnamon, ground turmeric, raisins and almonds. It goes well with fresh salad and mint raita for a savory Indian-style meal. Smart Recipes, Indian Recipes, Chicken,Grains Recipes, Recipes Chicken,Grains Indian Chicken Biryani Chicken Biryani Recipe | PT45M Serves 4 Ingredients: 1.5 Cups Basmati Rice 2 Tablespoons Butter 1 Large Onion 1 Bay Leaf 3 Cardamom Pods 1 Small Cinnamon Stick 1 Teaspoon Ground Turmeric 4 Skinless Chicken Breasts 4 Tablespoons Curry Paste 0.5 Cup Raisins 3.5 Cups Chicken Stock 1 Small Bunch Fresh Cilantro 0.5 Cup Toasted Almonds In a large bowl of warm water, soak rice for 15-20 minutes. Transfer rice to a colander and rinse well. Drain and set aside. In a Dutch oven over medium-high heat, melt butter and saute onions, bay leaf, cardamom and cinnamon until onions are translucent & fragrant, about 10 minutes. Add chicken, curry paste and cook until aromatic, another 10 minutes. Add rice and raisins and stir to combine. Add stock and bring mixture to a boil. Reduce heat to medium-low and simmer until liquid is absorbed, about 15 minutes. Remove from heat, cover and set aside for 10 minutes. Remove & discard bay leaf, cinnamon stick & cardamom pods. Stir in half the cilantro. Transfer chicken mixture to a serving platter and garnish with remaining cilantro & almonds.
