In a Dutch oven, brown the ground sausage for about 10 minutes. Set the sausage aside, reserving the rendered grease. Meanwhile, combine 1 cup of the milk of 4 eggs and whisk to combine, and set aside. Combine 2 cups of the milk and 2 cups of water to the Dutch oven and bring to a boil. Stir in the grits, continue to stir until smooth. Season with the salt and pepper. Reduce the heat and continue to stir until thick, for about 5 more minutes. Stir in the cheese, and mix until the cheese is melted and gooey. Stir in reserved egg mixture, 3/4 of the green onions, hot sauce, and minced jalapeno. Transfer the Dutch oven to the preheated oven, and bake for about 1 hour. To serve, spoon a healthy serving of the grit casserole to a large bowl and top with a slice of bacon and a fried egg.
