Add lager & egg and whisk until incorporated. Allow batter to rest for at least 10 minutes. Use paper towels to dry fish well & season with remaining salt & pepper. Line a platter with paper towels and set aside. In a Dutch oven over high heat, heat oil until it registers 375 degrees on a deep-fry thermometer. In small batches, dip fish in batter and place in hot oil. Fry until cod is golden brown, about 3 minutes on each side. Be sure to bring the heat back up to 375 degrees between batches.
