Smart Recipes, European Recipes, Eggs Recipes, Homemade Bagels 2 Recipe | RecipeSavants.com Recipes Eggs European Homemade Bagels Homemade Bagels Recipe | RecipeSavants.com PT1H30M Serves 12 Ingredients: 5 Tablespoons Dark Brown Sugar 4 Teaspoons Kitchen Bouquet 4 Teaspoons Active Dry Yeast 2 Teaspoons Malt Syrup Or Malt Powder 1.5 Cups Lukewarm Water 2 Tablespoons Onion 2 Cups Dark Rye Flour 1 Tablespoon Caraway Seeds 4 Tablespoons Cornmeal 1.5 Tablespoons Salt 3 Cups Unbleached White Bread Flour 1 Large Egg White In a large bowl, add 3 tablespoons brown sugar, Kitchen Bouquet, yeast, malt syrup and 1 1/2 cups of lukewarm water and mix until yeast is dissolved. Add onions, rye flour, caraway seeds, 2 tablespoons cornmeal, and 1 tablespoon salt and mix until well combined. Add enough bread flour and mix until a soft dough is formed. On a lightly floured surface, transfer the mixture and knead for about 15 minutes, until firm dough is formed. If the dough is sticky, add a little more bread flour. With a towel, cover dough for 10 minutes. Divide into 12 equal- sized portions. Roll each into a 10-inch-long rope. Pinch ends of each rope together to form bagels. Rest for 20 minutes. Preheat oven to 450 degrees. Line 2 sheet pans with Silpat or parchment paper and sprinkle with remaining 2 tablespoons of cornmeal. In a large stockpot, add 6 quarts of water, 2 tablespoons brown sugar and 1 teaspoon salt and bring to a boil. Transfer bagels into saucepan and cook for about 45 seconds per side. Place bagels onto the dish towel to drain. Arrange bagels onto prepared sheet pans and coat with egg whites. Reduce heat to 420 degrees and bake for 12 minutes. Flip bagels and bake for an additional 5 minutes.
