4 Tablespoons Olive Oil2 Pound Brussels Sprouts0 To Taste Kosher Salt & Ground Black Pepper0.33 Cup Apricot Jam3 Tablespoons White Wine Vinegar1 Tablespoon Whole-Grain Mustard4 Clove Garlic0.5 Cup Jarred ChestnutsIn a small bowl, add jam, mustard, vinegar and 1/2 teaspoon of black pepper and beat until well combined. Keep aside.In a large skillet, add 1/2 cup of water and 2 tablespoons of oil and bring to a gentle boil. Stir in Brussels sprouts and 1/2 teaspoon of salt and cook, covered for about 5 minutes, stirring occasionally. Increase the heat to medium-high and cook, uncovered for about 2 minutes. Add remaining 2 tablespoons of oil and garlic and cook for about 2-3 minutes, tossing occasionally. Stir in jam mixture and chestnuts and cook for about 1 minute.
