2 Tablespoons Peanut Oil1 Large Red Onion2 Cloves Garlic2 Tablespoons Fresh Ginger1 Pound Boneless & Skinless Chicken Thighs1 Tablespoon Crushed Red Pepper Flakes5 Cups Chicken Stock3 Small Sweet Potatoes15 Ounces Canned Chopped Tomatoes0.25 Pound Collard Greens0.25 Teaspoon Salt & Ground Black Pepper1 Cup Chunky Peanut ButterHeat oil in a Dutch oven over medium heat. Add onion, garlic, and ginger and sauté for 5 minutes. Stir in chicken and brown until golden brown. Add the chicken stock, red pepper flakes, potatoes, black pepper, and salt. Bring to a boil, and reduce to a simmer for 15 minutes. Add tomatoes (with their juice), peanut butter, and collard greens cover partially with a lid and simmer for another 20 minutes.
Garnish if desired with a sprinkle of freshly roasted salted peanuts. Pair with African flatbread, or simply steamed white rice.
