8 Cups Mint Leaves1 Medium Lemon2 Whole Green Chili1 Red Onion4 Teaspoons Fresh Ginger1 Teaspoon Kosher Salt0.25 Teaspoon Sugar0.25 Teaspoon Dry Mango Powder0.25 Teaspoon Ground Cumin0.25 Teaspoon Ground Cinnamon1 Teaspoon Black Pepper8 Slices Sandwich Bread4 Tablespoons Butter4 Medium Red Onion4 Medium Tomatoes8 Green Chilies2 Cup Cheddar Cheese4 Cups CilantroFor the chutney: In a food processor, add a little water, mint leaves, coriander, lemon juice, 1 green chili, 1/2 of red onion, ginger, a pinch of salt and sugar and pulse until smooth. Set aside.In a small bowl, mix together mango powder, cumin, cinnamon, salt, and black pepper.Meanwhile, preheat the sandwich press over high heat. Trim crusts off the bread. Spread butter on both sides of the bread. Top bread slice with chutney, remaining red onion, tomato, a pinch of the spice mixture, chilies and cheese. Cover with another bread slice, butter side up, and lightly press the sandwich down. Press sandwiches for three or four minutes. Cut each sandwich in half and serve.
