When oil is ready, add the pork and season with salt and pepper then stir fry for 3 minutes. Mix in the onions and garlic and stir fry for 2 minutes. Add in the bok choy and shrimp and season with salt and pepper then stir fry for 1 minute. Season the mixture with soy sauce, sake and sugar then thoroughly mix in the sprouts and green onions. Remove from heat and let cool. Preheat the deep fryer. Use about 1/4 cup of the mixture for each egg roll, placing the mixture in the center of each wrapper. Then fold the wrappers by folding each end toward the center about 1/4 inch and roll up the wrapper starting at the bottom. Use egg wash to seal the end tightly. Fry the egg rolls about 2-3 until golden brown then transfer to paper towerls to drain the oil.
