2 Teaspoons Butter1 Cup Onion0.5 Cup Dried Currants0.5 Cup Dried Appricots0.5 Teaspoon Salt32 Ounces Fat-Free, Low-Sodium Chicken Broth2.5 Cups Uncooked Israeli Couscous0.25 Cup Fresh Cilantro3 Sticks CinnamonIn a large pan, melt butter over medium-high heat and sauté onion for about 5 minutes. Stir in apricots, currants, broth plus 8 ounces of water, cinnamon sticks and salt and bring to a boil. Stir in couscous and again bring to a boil. Reduce heat and simmer for about 15 minutes. Remove from heat and keep aside, covered for about 5 minutes. Discard cinnamon sticks. Stir in cilantro and serve.
