Bring the mixture to a boil. Stir in the flour at once and keep stirring until a lump of dough forms. Continue to cook for 1 minute more, constantly turning the dough around in the saucepan. Remove from heat. Stir in vanilla and add eggs, one at a time, mixing well after each. The dough should be a bit stiff and shiny. Place dough in a large pastry bag fitted with a 1/2-inch star or round tip. Place a sheet of wax paper on a large sheet pan. Pipe lengths of dough about 6 inches long onto prepared pan and place in the freezer. Meanwhile, in a Dutch oven over high heat, heat oil to 375 degrees. Line a platter with paper towels and set aside. With a spatula, carefully drop a few of the churros in the oil without overcrowding. In small batches, fry churros until golden brown, about 2 minutes on each side. Transfer them to a prepared platter to drain & cool. In a small bowl, mix 1/2 cup sugar and the cinnamon together. Roll churros in the mix while they are warm. Fill a pastry bag fitted with a #4 round tip with chocolate hazelnut spread. Use a skewer to poke a hole in both ends of each churro and pipe with filling.
