1 Pound Ground Chicken1 Pound Ground Pork2 Tablespoons Vegetable Oil3 Medium Tomatoes1 Large Onion2 Medium Green Bell Peppers2 Medium Red Bell Peppers1 Cubano Pepper1 Teaspoon Dried Oregano1 Teaspoon Dried Basil1.5 Tablespoons Paprika1 Pinch Dried Thyme1 Pinch Dried Rosemary1 Teaspoon Sea Salt & Freshly Ground Black Pepper8 Cups Chicken Stock4 Cups Long Grain Rice0.25 Cup Cilantro Leaves1 Large OrangeHeat oil over medium-high heat in a Dutch oven and sauté onions until softened. Combine ground beef & pork, and cook until completely browned. Add smashed tomatoes, diced onions, diced peppers, oregano, basil, thyme, rosemary, paprika and sea salt. Sauté for 10 minutes, stirring occasionally. Add 8 cups chicken stock and bring to a boil.Stir in the rice, and reduce to a simmer, continue to cook for 25 minutes. Allow the rice to rest for 5 minutes. Garnish with cilantro leaves and a sprinkle of the orange zest when serving.
