In another small bowl, add eggs and egg yolk and with a fork, beat lightly. In a large pan, add 3 1/4 cups of broth, chives, ground ginger and salt and bring to a rolling boil. Slowly, add egg mixture, a little at a time, stirring continuously. Slowly, add cornstarch mixture, stirring continuously. Cook till desired consistency of soup, with constant stirring.
