4 Cups Chicken Broth0.125 Teaspoon Ground Ginger2 Tablespoons Fresh Chives0.25 Teaspoon Salt1.5 Tablespoons Cornstarch2 Eggs1 Egg YolkIn a small bowl, dissolve cornstarch in 3/4 cup of broth, keep aside. In another small bowl, add eggs and egg yolk and with a fork, beat lightly.In a large pan, add 3 1/4 cups of broth, chives, ground ginger and salt and bring to a rolling boil. Slowly, add egg mixture, a little at a time, stirring continuously. Slowly, add cornstarch mixture, stirring continuously. Cook till desired consistency of soup, with constant stirring.
