Stir in paprika and cumin and cook for 1-2 minutes, stirring continuously. Add chicken, chipotles, and 1/4 cup of water and stir to combine. Reduce heat and simmer, covered for 35-45 minutes. Uncover and cook for 5-10 minutes. Remove from heat and with 2 forks, shred the chicken roughly.Meanwhile, for tostadas: In a medium skillet, heat 1/4-inch of oil over medium-high heat and fry 2 tortillas, at a time for 1-2 minutes per side.
