Place 1 portion of dough onto a well-floured surface and roll into 1/8-inch thickness. With a 2½ inch shaped cookie cutter, cut into cookies. Arrange cookies onto prepared cookie sheets in a single layer about 1-inch apart. Repeat with remaining dough portions. Dust cookies with colored sugar. Bake for about 6 minutes. Remove from oven and keep onto the wire rack to cool in pan for about 5-10 minutes. Carefully, invert cookies onto wire rack to cool completely.
