Drain noodles in a colander and rinse under cold water. Again, drain well. Meanwhile soften rice paper in a small bowl of warm water according to package instructions. In a large, shallow dish, place about 1-inch deep hot water. Add1 rice paper sheet in the dish for about 30 seconds or till soft. Remove from water and arrange sheet onto a smooth surface. Place 1 lettuce leaf over rice sheet. Top with 2 basil leaves, followed by 4 shrimp halves, 2 tablespoons noodles, 5 cucumber strips, 5 carrot strips, 5 green scallion strips and 3 mint leaves.
