Ingredients:
1 Bay Leaf0.25 Cup Shallots1 Cup Dry White Wine4 Juniper Berries3 Tablespoons Garlic2 Tablespoons Cold Fresh Lemon Juice2 Teaspoons Sugar2 Teaspoons Black Peppercorns0.75 Cup Hot Mustard Powder2 Teaspoons Kosher Salt1 Cup Cider Vinegar0.5 Cup Minced Yellow Onion0.25 Cup Very Cold WaterIn a bowl, make a paste with mustard powder and water. In a saucepan, add vinegar, onion, shallots, wine, bay leaf, garlic, berries and peppercorns and bring to a boil over medium-high heat until the mixture reduces by two-thirds. Strain, cover and chill. After chilling, stir the vinegar reduction into the mustard paste. Add sugar, lemon juice and salt and mix well to combine. Allow the mixture to stand for about 20 minutes. Transfer to the saucepan and simmer for about 15 minutes over low heat. Turn the heat off and let stand to bring to room temperature. To Store The Mustard: Pour mixture into a sterilized jar and tightly seal. Store in a cool, dark place for up to one month.
