6 Soft Flour Tortillas8 Ounce Cream Cheese2 Tablespoons Sour Cream0.33 Cup Plus 1 Tablespoon Sugar1 Teaspoon Vanilla Extract1.75 Cups Fresh Strawberries0 Vegetable Oil1 Tablespoon Ground CinnamonIn a bowl, add sour cream, cream cheese, 1 tablespoon of sugar and vanilla extract and beat till smooth. Gently, fold in ¾ cup strawberry slices.Arrange tortillas on a smooth surface. Place strawberry mixture over the lower third of each tortilla evenly. Fold the two sides of each tortilla towards the center and then roll like a burrito. With toothpicks, secure each burrito.In a shallow bowl, mix together 1/3 cup of sugar and cinnamon. Keep aside.In a deep pan, heat about 2 - 2½-inch vegetable oil over medium-high heat and fry chimichangas for about 2-3 minutes per side or till golden brown.With a slotted spoon, transfer the chimichangas onto paper towel lined plate to drain for about 1 minute. Coat each chimichanga with cinnamon sugar and serve. Serve with the topping of remaining strawberry slices.
