Coat a doughnut pan with cooking spray and set aside. In a stand mixer on medium speed, beat buttermilk, egg, oil and almond extract until combined. In a large mixing bowl, add flour, sugar, pudding mix, baking powder, baking soda salt and whisk until combined. With the stand mixer on low speed, gradually add the flour mixture until just combined, without over-mixing. In a small bowl, mix pistachios with a teaspoon of flour. Remove batter from mixer and use a spatula to gently fold in the nuts. Use a teaspoon to scoop batter into prepared doughnut pan until each section is 3/4 full and smooth the batter’s surface. Bake until a toothpick inserted in a doughnut comes out clean, about 10-12 minutes. Remove pan from the oven and place on a wire rack to cool at least 10 minutes. Invert pan on work surface and arrange doughnuts on wire rack to completely cool. Meanwhile, in a medium bowl, add powdered sugar, honey, milk and mix into a thick glaze. Dip cooled doughnuts face down into glaze and transfer to a wire rack. Sprinkle each doughnut with chopped nuts and allow the glaze to set before serving.
