2 Large Egg Yolks0.5 Medium Lemon1 Teaspoon White Wine Vinegar1 Cup Extra Virgin Olive Oil0.25 Teaspoon Kosher Salt0.5 Teaspoon Dijon MustardIn the bowl of a food processor, combine egg yolks, lemon juice, and white wine vinegar. Pulse until the mixture is combined. Slowly add olive oil, a few drops at a time until the mixture starts to come together. Slowly pour the remaining olive oil (in a very slow stream) while the food processor is running. Until the mixture is thick and light in color. Stir in the salt, and dijon mustard and pulse a few times to combine.Transfer to a small mason jar and store in the refrigerator up to 2 days.
