Add potatoes to a bowl, and season with turmeric powder, red chili and salt.Heat a tablespoon of oil in a heavy cast iron skillet. Add cumin seeds, curry leaves, mustard seeds, Asafoetida and sauté for one minute.Stir in potatoes and sauté for another 5five minutes. Drizzle the potatoes with some more oil if they look dry. Transfer the skillet to the preheated oven and roast for about 30 minutes or until potatoes are fork tender and golden brown.
