Smart Recipes, American Recipes, Chicken,Vegetables,Other Recipes, Recipes Chicken,Vegetables,Other American Garlic Mashed Potatoes With Caramelized Onions Garlic Mashed Potatoes With Caramelized Onions Recipe | PT45M Serves 8 Ingredients: 6 Cups Chicken Stock 5 Pounds Red Potatoes 7 Cloves Roasted Garlic 0.5 Cup Butter 4 Ounces Cream Cheese 0.5 Cup Buttermilk 1 Teaspoon Salt 0.5 Teaspoon Freshly Ground Black Pepper 1 Teaspoon Olive Oil 1 Teaspoon Butter 1 Large Onion 0.5 Teaspoon Sugar 0.25 Cup Water 1 Teaspoon Balsamic Vinegar In a large saucepan over high heat, bring stock to a boil. Add potatoes and boil until they are fork-tender, about 15 minutes. Meanwhile, in a medium skillet over medium heat, heat butter & oil and saute onions until just browning, about 10 minutes. Reduce heat to low and stir in sugar & water. Stir occasionally until onions are caramelized and fragrant, another 10 minutes. Stir in vinegar, remove from heat and set aside.
