6 Cups Chicken Stock5 Pounds Red Potatoes7 Cloves Roasted Garlic0.5 Cup Butter4 Ounces Cream Cheese0.5 Cup Buttermilk1 Teaspoon Salt0.5 Teaspoon Freshly Ground Black Pepper1 Teaspoon Olive Oil1 Teaspoon Butter1 Large Onion0.5 Teaspoon Sugar0.25 Cup Water1 Teaspoon Balsamic VinegarIn a large saucepan over high heat, bring stock to a boil. Add potatoes and boil until they are fork-tender, about 15 minutes.Meanwhile, in a medium skillet over medium heat, heat butter & oil and saute onions until just browning, about 10 minutes. Reduce heat to low and stir in sugar & water. Stir occasionally until onions are caramelized and fragrant, another 10 minutes. Stir in vinegar, remove from heat and set aside.Use a colander to strain potatoes and transfer them into a large bowl. Add garlic, butter, cream cheese, buttermilk, salt & pepper. Use a masher to mash and blend potatoes and ingredients until completely combined. Top with caramelized onions and serve hot.
