1 Pound Granulated Sugar0.125 Teaspoon Salt2 Cups Salt-Free Pure Sesame Tahini1 Teaspoon Vanilla Extract0.5 Pound Dark Chocolate0.5 Cup WaterLine a bread pan with a large piece plastic wrap, leaving an overhang on both sides and set aside.In a medium sauce pan, combine sugar, salt, water and bring to a boil, stirring occasionally. Arrange a candy thermometer in the pan and cook until the temperature of sugar mixture reaches to 250 degrees, without stirring. Dip a pastry brush in the mixture and occasionally scrape down the sides of the pan.In another small saucepan, heat tahini until it reaches a temperature of 120 degrees. In the bowl of a stand mixer fitted with a paddle attachment, combine tahini, vanilla extract, and sugar mixture. Mix at a low speed until a grainy mixture is formed. Add chocolate and mix until the chocolate is just barely combined (it should look like a swirl pattern). Immediately, place the mixture into prepared bread pan and with a spatula, smooth the top surface. Fold the overhanging of plastic wrap over the top and set aside at room temperature for at least one hour. Wrap tightly in a plastic wrap, and store in a airtight container in the refrigerator.
