In a stand mixer on medium speed, add yeast mixture, sugar, salt & 3 cups flour. Beat until fully combined, about 3 minutes. Gradually beat in remaining flour until a soft dough forms. Turn the dough onto a floured work surface and kneed until elastic & smooth, about 8 minutes. Coat a large bowl well with cooking spray. Form dough into a ball and place in prepared bowl, turning once to grease the top. Cover with a clean cloth and let rise in a warm place until dough is doubled, about 1 hour. Spray a large sheet pan with cooking spray and set aside. Punch dough down and turn onto the floured work surface. Divide into 2 equal halves and shape each into a loaf. Place each loaf (seam side down) on prepared sheet pan. Cover and let rise until doubled, about 30 minutes. Meanwhile, preheat oven to 400 degrees. Use a sharp knife to make four shallow slashes across top of each loaf. Bake until golden brown, about 20-25 minutes. Remove from the oven and place loaves on wire racks to cool.
