1.75 Cups All-Purpose Flour1.5 Teaspoon Baking Powder0.5 Teaspoon Salt0.75 Cup Granulated Sugar0.5 Cup Vegetable Oil2 Large Eggs1 Teaspoon Pure Vanilla Extract0.75 Cup White Chocolate Chips0.75 Cup Dried Cranberries0.75 Cup PistachiosPreheat oven to 325 degrees. Line a sheet pan with silpat or sheet of parchment paper and set aside.In a medium bowl, combine the flour, baking powder, and salt. In a stand mixer, combine the sugar & oil and mix until blended. Mix in eggs and vanilla. Gradually add the flour mixture and mix until incorporated, and gently fold in the chocolate, cranberries and pistachios.Divide dough into half. On the prepared sheet pan, shape each half into a rectangle that measures approximately 10 inches long, 1 inch wide and 1/2-inch thick. Bake until the halves are lightly brown, about 30-35 minutes. Transfer pan to a wire rack to cool. Use a serrated knife to cut each half into 1/2 -inch slices. Arrange the biscotti cut side down on the sheet pan. Bake until golden brown, about 6-7 minutes on each side. Transfer biscotti to wire rack to cool. Store in a sealed container.
