Ingredients:
2 Tablespoons Extra-Virgin Olive Oil1 Clove Garlic2 Medium Chilies6 Small Anchovy Fillets1 Small Bunch Fresh Kale1 Small Bunch Fresh Baby Spinach1 Cup Water0.25 Teaspoon Salt & Freshly Ground Black Pepper1 Fresh Mozzarella Ball1 Large Pizza Crust1 Large EggPreheat oven to 395 degrees. Line a sheet pan with silpat or parchment paper and set aside.
In a medium saucepan over medium heat, heat oil and saute garlic, chilies & anchovies until fragrant, about 3 minutes. Add kale & spinach and cook for 10 minutes. Stir in water and cook until greens are tender and water is evaporated, about 20 minutes. Season with salt & pepper. Remove from heat and set aside.On the prepared sheet pan, spread the dough into a circle. On 1 side of the dough, spoon kale mixture and top with cheese. Fold the other side of the dough over to create a half circle. Roll edges uptight and use a fork to seal. Brush with egg wash and use a knife tip to cut 2 steam slits in the top. Bake calzone until golden brown and crispy, about 15-20 minutes. Slice into quarters and serve hot.
