Place a roasting rack in a large shallow roasting pan.In a large skillet, melt butter over medium heat and sauté onion for 5 minutes, stirring frequently. Add apple and celery and sauté for another 5 minutes. Transfer apple mixture to a large bowl and set aside to cool slightly. Add ground pork, sausage meat, breadcrumbs, sage, parsley, salt, and black pepper and gently mix until well combined. Stuff the center of crown with stuffing. Cover the roast and end of the chops with foil. And, place the roast onto the roasting rack. Roast for 2 1/2 hours. Allow the roast to rest for at least 30 minutes.Remove the foil from the roast before carving into individual chops. Serve with a healthy serving of the stuffing.
