4 Cups Fresh Fruit0.5 Cup Water1 Tablespoon Freshly Squeezed Lemon Juice2 Tablespoons Granulated Sugar0.25 Teaspoon Ground CinnamonAfter chopping the fruit, taste to see if it is sweet enough. If so, do not add sugar. Meanwhile, preheat the oven to 150 degrees.In a large saucepan over low heat, add fruit, water, sugar (if needed), lemon juice & cinnamon. Simmer and stir occasionally for 10 to 15 minutes.With a potato masher, mash fruit into a pulp. Taste and add more sugar or lemon juice to boost flavor, if needed. Simmer 5 or 10 minutes more, until pulp has thickened.In the bowl of a food processor, add fruit pulp and puree until smooth. In the bottom of a rimmed sheet pan, add a layer of microwave-safe plastic wrap. Transfer puree into pan and smooth out with a spatula to about 1/8 inch thick.Place pan in the oven overnight, or for 8 to 12 hours. Roll fruit leather up in its plastic wrap layer and place in a resealable container and refrigerate.
