Place minced onion in paper towels to squeeze out excess moisture. In a large bowl, add onion and all other ingredients and knead until combined. Cover the bowl and refrigerate overnight. Preheat oven to 325 degrees. In a large saucepan on medium-high heat, pour water and bring to a boil. In the bowl of a food processor, process meat in small batches until it is a thick paste. In two loaf pans, divide the meat and press down to even it out. In a large roasting pan, spread a wet kitchen towel and arrange the loaf pans. Add enough boiling water to measure about 2/3 up the sides of loaves. Bake until the internal temperature measures 165 degrees, about 50 to 70 minutes. Pour off accumulated fat from loaves and place them on a cooling rack. Wrap a brick with aluminum foil and place on top of the loaves for 20 minutes. Turn loaves out, wrap them in plastic wrap, and refrigerate until firm, about 8 hours or overnight.
