2 Pounds Ground Chuck2 Pounds Ground Lamb1 Large Onion1 Large Garlic Clove1 Tablespoon Dried Oregano1 Tablespoon Dried Thyme2.5 Teaspoons Ground Cumin2 Teaspoons Sea Salt & Freshly Ground Black Pepper1 Teaspoon Dried Rosemary6 Cups WaterIn the bowl of a food processor, pulse onions until minced. Place minced onion in paper towels to squeeze out excess moisture. In a large bowl, add onion and all other ingredients and knead until combined. Cover the bowl and refrigerate overnight.Preheat oven to 325 degrees. In a large saucepan on medium-high heat, pour water and bring to a boil.In the bowl of a food processor, process meat in small batches until it is a thick paste. In two loaf pans, divide the meat and press down to even it out. In a large roasting pan, spread a wet kitchen towel and arrange the loaf pans. Add enough boiling water to measure about 2/3 up the sides of loaves. Bake until the internal temperature measures 165 degrees, about 50 to 70 minutes.Pour off accumulated fat from loaves and place them on a cooling rack. Wrap a brick with aluminum foil and place on top of the loaves for 20 minutes. Turn loaves out, wrap them in plastic wrap, and refrigerate until firm, about 8 hours or overnight.
