1 Pinch Mustard Seeds4 Medium Potatoes1 Small Pinch Sugar1 Bunch Spinach1 Bunch Fenugreek Greens0 To Taste Salt1 Pinch Asafoetida0.25 Teaspoon Cayenne1 Pinch TurmericIn a pan of boiling water, cook potatoes till desired doneness. Peel potatoes and then cut into cubes. Heat a non-stick pan and sauté mustard seeds till they start spluttering. Add asafetida and sauté just a couple of seconds. Add cayenne pepper, turmeric, crushed fenugreek leaves and a little water and sauté a couple more seconds. Add potatoes, sugar and salt and stir to combine. Reduce heat and sauté till nice crust forms around potatoes. Slowly, add shredded greens, a little at a time and sauté until all liquid is absorbed and the greens are wilted. Serve alongside steamed rice.
