Allow it to soak for at least 30 seconds, then drain. In another medium bowl, beat eggs until frothy and season with salt & pepper. Add drained matzo and mix into a wet batter. In a large cast-iron skillet over medium-high heat, heat oil and scoop out 4 cakes with 1/4 cup of batter for each. Fry until golden brown, about 1 minute on each side. Transfer cakes to a plate lined with paper towels to drain. Repeat steps for the remaining batter.
