3 Pounds Potatoes1 Cup All-Purpose Flour3 Eggs0.66 Cup Dry Breadcrumbs1 Teaspoon Salt0.5 Teaspoon Ground Nutmeg0.5 Cup Butter1 Tablespoon OnionIn a Dutch oven, add potatoes and enough water to cover and bring to a boil. Reduce heat and cook, uncovered for about 15-20 minutes. Drain the potatoes and transfer to a large bowl.With a potato masher, mash potatoes. Add flour, 2/3 cup of bread crumbs, eggs, nutmeg and salt and stir to combine. Make 16 (2-inch) balls from the mixture.In a Dutch oven, add 12 cups of water and bring to a boil. Carefully add dumplings and reduce the heat. Simmer for about 7-9 minutes or till a toothpick inserted in center of dumplings comes out clean.Meanwhile, in a small heavy pan, melt butter over medium heat and sauté onion for about 5-7 minutes. Remove from heat and stir in ¼ cup of breadcrumbs. Serve dumplings with onion mixture.
