2 Tablespoons Coconut Oil1 Pound Brussels Sprouts0.125 Cup Red Onion2 Tablespoons Thai Chili Paste0.5 Teaspoon Ground Turmeric2 Small Roma Tomatoes0.25 Cup Fresh Cilantro0 Juice Of 1/2 Lime1 Pinch SaltIn a large cast iron skillet, melt coconut oil over medium heat and sauté onion for about 3-4 minutes. Add brussels sprouts and stir to combine. Increase the heat to medium-high and cook for about 8 minutes, flipping occasionally. Add tomato, Thai chili paste and turmeric and stir to combine. Reduce heat to medium and cook for about 3-4 minutes. Stir in cilantro, lime juice and a pinch of salt and remove from heat.
