1 Tablespoon Olive Oil1 Jalapeño2 Cloves Garlic1 Cup Quinoa1 Can Black Beans1.5 Cups Homemade Veggie Broth1 Cup Yellow Or White Corn1 Can Mexican-Style Diced Tomatoes0.5 Teaspoon Ground Cumin1 Teaspoon Chili Powder0.125 Teaspoon Salt & Freshly Cracked Black Pepper1 Avocado1 Tablespoon Juice Of 1 Lime2 Tablespoons Fresh Cilantro LeavesIn a large pan, heat olive oil and sauté onion, garlic and jalapeño till onions become translucent. Stir in quinoa, beans, broth, corn, tomatoes, cumin, chili powder, salt and black pepper and bring to a boil. Reduce the heat to low and simmer, covered about 20-30 minutes. Stir in avocado, cilantro and lime juice and remove from heat. Serve hot.
