0.25 Cup Unsalted Butter3 Large Yellow Onions2 Cloves Garlic2 Sprigs Fresh Thyme1 Bay Leaf0.5 Cup Dry Red Wine8 Cups Beef Stock0.75 Teaspoon Salt0.5 Teaspoon Freshly Ground Black Pepper0.5 Cup Freshly Grated Gruyère Cheese1 Large French BaguetteIn an electric pressure cooker set on saute, melt the butter and stir in onions, garlic, thyme, and bay leaf. Saute mixture until onions begin to soften, about 5 minutes. Stir in 3 tablespoons water and saute for 30 minutes.Pour in wine and use a wooden spoon to scrape up brown bits from the bottom of the cooker, and simmer for 10 minutes. Discard the bay leaf and thyme stems. Stir in the beef stock to the onion mixture and cook under high pressure for 10 minutes, and allow the pressure to release naturally.Meanwhile, preheat the broiler. On a sheet pan lined with parchment paper, arrange bread slices in a single layer. Top each slice evenly with grated cheese. Broil until slices are golden brown and the cheese is bubbly, about 3-5 minutes.Ladle soup into individual bowls and top each with cheesy baguette slice.
