1 Teaspoon Vanilla Extract0.5 Cup Packed Dark Brown Sugar0.25 Teaspoon Ground Cloves0.25 Teaspoon Salt2 Cups All-Purpose Flour1.5 Teaspoon Ground Ginger0.25 Cup Reduced-Calorie Tub Margarine2 Large Egg Whites0.5 Teaspoon Baking Soda1.5 Tablespoons Crystallized Ginger0.25 Teaspoon Ground Allspice0.25 Teaspoon Ground CinnamonPreheat the oven to 400 degrees. Grease 2 large cookie sheets with nonstick cooking spray. In a bowl, mix together flour, baking soda, ground ginger, cinnamon, cloves, allspice and salt. In another large bowl, add brown sugar and margarine and with an electric mixer, beat on medium speed until light and fluffy. Add egg whites and vanilla extract and beat till well combined. Slowly, add flour mixture and beat on low speed until well combined. Add crystallized ginger and stir to combine. Divide dough into 2 equal sized portions. Place 1 dough portion onto a lightly floured surface and with a floured rolling pin, roll into a 1/4-inch thick round. With your favorite cookie cutter, cut cookies. Arrange cookies on prepared cookie sheets in a single layer about 1-inch apart. Bake for about 5 minutes, switching the position of sheets once during the cooking time. Remove from oven and keep onto a wire rack to cool in the pans for about 5 minutes. Carefully, invert cookies onto wire rack to cool completely. Repeat with remaining dough.
