Lightly grease a 1 1/2-2-quart casserole dish with a little olive oil. With a mandoline slicer, slice potatoes and squash into 1/8-inch thick slices. In a large bowl, add vegetable slices and olive oil and toss to coat well. Arrange 1/3 of vegetable slices in the bottom of prepared casserole evenly and sprinkle with salt and black pepper, followed by 1/2 of goat cheese.
