2 Medium Yellow Summer Squash4 Medium Red Potatoes3 Tablespoons Olive Oil4 Ounces Goat Cheese0.5 Teaspoon Salt & Freshly Ground Black Pepper0.25 Cup Whole Milk0.33 Cup Parmesan Cheese1 Tablespoon Basil Or Thyme LeavesPreheat the oven to 400 degrees. Lightly grease a 1 1/2-2-quart casserole dish with a little olive oil.With a mandoline slicer, slice potatoes and squash into 1/8-inch thick slices. In a large bowl, add vegetable slices and olive oil and toss to coat well.Arrange 1/3 of vegetable slices in the bottom of prepared casserole evenly and sprinkle with salt and black pepper, followed by 1/2 of goat cheese. Place the second layer of 1/3 of vegetable slices, salt, black pepper and remaining goat cheese. Now, place a third layer of remaining vegetable slices, salt and black pepper. Place milk on top of the layers evenly and sprinkle with Parmesan cheese. Cover the baking dish and bake for about 30 minutes. Uncover and bake for about 15 minutes. Serve warm with the garnishing if basil or thyme.
