0.5 Pound Unsalted Butter2 Tablespoons Powdered Sugar3.5 Cups Granulated Sugar3 Cups All-Purpose Flour0.125 Teaspoon Kosher Salt6 Large Eggs6 Medium LemonsIn the bowl of a stand mixer fitted with paddle attachment, cream, butter, and 1/2 cup of sugar until mixture is pale yellow. With a mixer on low speed, gradually add 2 cups of flour and salt and mix completely.
Transfer dough to a well-floured work surface and shape it into a ball. With floured hands, flatten dough into a rectangle. Carefully place on a lightly greased sheet pan.Press dough with fingers to form a thin crust over the surface of a sheet pan, about 1/2 inch thick. Chill in refrigerator for at least 30 minutes.Preheat oven to 350 degrees and bake pastry until light golden brown, about 15-20 minutes. Allow to cool slightly. In a large bowl, add remaining flour, sugar, eggs, lemon zest, and 1 cup of lemon juice. Beat until well combined.
