1.25 Pounds Lamb0.75 Cup Onion0.5 Cup Parsley0.5 Cup Cilantro4 Cloves Garlic0.75 Teaspoon Salt0.5 Teaspoon Ground Black Pepper0.5 Teaspoon Paprika0.5 Teaspoon Cayenne Pepper12 Bambo Skewers0.25 Cup Olive Oil6 Warm Pita BreadsTo Make Kebabs: In a large mixing bowl, combine the lamb with onion, 1/2 cup cilantro, 1/2 cup parsley, 4 cloves minced garlic, 1/2 teaspoon cayenne, 1/2 teaspoon paprika, 3/4 teaspoon salt and 1/2 teaspoon black pepper. You can make ahead and refrigerate covered about 6 hours. Soak bamboo sticks in a shallow dish filled with water for about 1 hour. Prepare barbecue over medium-high heat. Drain skewers. Form 3-inch long lamb kebabs over each skewer with ¼ cup of lamb mixture. Brush with oil and grill until cooked through and nicely brown, turning frequently, and basting with oil if desired.
