1 French Baguette4 Ounce Peppercorn Goat Cheese1 Mango1 Teaspoon Salt0.5 cup Olive Oil2 Teaspoons Fresh Parsley0.5 Teaspoon Black PepperPreheat oven to 325 degrees.Trim the baguette ends off and discard. Slice the baguette with a sharp bread knife into 18 slices of 1/2–inch thickness each. Brush the slices with olive oil and place on a baking sheet in a single layer. Broil the slices until nicely golden and toasted, about 1 to 2 minutes per side. Remove from heat and immediately spread one side of the toasts generously with goat cheese. To Make Salsa: Combine mango with 3 tablespoons of olive oil, parsley, salt and black pepper in a bowl. Top each toast with mango salsa equally and serve.
