Ingredients:
3 Teaspoons Extra-Virgin Olive Oil2 Teaspoons Unsalted Butter4 Ounces Bacon2 Large Onions0.25 Teaspoon Fine Sea Salt & Freshly Ground Pepper1 Tablespoon Balsamic Vinegar1 Tablespoon Honey5 Fresh Thyme Sprigs8 Ounces Puff PastryIn a large sauté pan, heat olive oil and butter over medium-high heat and cook bacon until browned. Reduce the heat to medium-low, saute onions with salt and black pepper and cook, about 15 minutes; stir occasionally. Add balsamic vinegar, honey, and thyme and stir to combine. Increase the heat to high and boil for about 2-3 minutes, stirring occasionally. Set onion mixture aside for about 30 minutes, discarding thyme sprigs. Meanwhile, preheat the oven to 400 degrees.Place the pastry onto a lightly floured surface and roll into 1/8-inch thickness. Press dough into a 10-inch tart pan. With a fork, prick the bottom of the dough. Carefully, trim the edges. With a slotted spoon, transfer onion mixture into tart shell evenly, leaving excess oil in the pan. With the back of the spoon, smooth the top surface. Bake until pastry becomes crisp and golden or about 20 minutes. Remove from the oven and allow to rest for 5 minutes before serving.
