Smart Recipes, Vegetarian Recipes, Vegetables Recipes, Recipes Vegetables Vegetarian Chilled Farro & Summer Vegetable Salad Chilled Farro & Summer Vegetable  Salad Recipe | PT55M Serves 6 Ingredients: 0.75 Cup Uncooked Farro 1 Teaspoon Salt 2 Cups Water 1 Cup Corn Kernals 0.75 Cup Zucchini 0.25 Cup Mayonaise 0.25 Cup Greek Yogurt 3 Tablespoons Shallot 1 Tablespoon Apple Cider Vinegar 0.25 Cup Fresh Dil 0.5 Teaspoon Black Pepper 1 Cup Plum Tomato In a medium skillet, add farro, 1/2 teaspoon salt and water and bring to a boil over high heat. Reduce the heat to medium-low. Cover and cook for about 30 minutes or until tender. Drain well, and then transfer to a large bowl to cool. Add corn and zucchini and mix till well combined In a large bowl, mix together yogurt, vinegar, mayonnaise, shallot, dill, salt and pepper until smooth. Add in tomatoes and farro mixture and toss to combine. Cover and refrigerate for 30 minutes until chilled.
