0.75 Cup Uncooked Farro1 Teaspoon Salt2 Cups Water1 Cup Corn Kernals0.75 Cup Zucchini0.25 Cup Mayonaise0.25 Cup Greek Yogurt3 Tablespoons Shallot1 Tablespoon Apple Cider Vinegar0.25 Cup Fresh Dil0.5 Teaspoon Black Pepper1 Cup Plum TomatoIn a medium skillet, add farro, 1/2 teaspoon salt and water and bring to a boil over high heat. Reduce the heat to medium-low. Cover and cook for about 30 minutes or until tender. Drain well, and then transfer to a large bowl to cool. Add corn and zucchini and mix till well combinedIn a large bowl, mix together yogurt, vinegar, mayonnaise, shallot, dill, salt and pepper until smooth. Add in tomatoes and farro mixture and toss to combine. Cover and refrigerate for 30 minutes until chilled.
