2 Tablespoons Minced Ginger2 Tablespoons Garlic3 Cups White Vinegar2 Cloves0.5 Cup Dark Corn Syrup2 Large Onions2 Tablespoons Freshly Cracked Black Pepper1 Lime1 Cup Molasses3 Tablespoons Tomato Paste2 Cups Water2 Tablespoons Olive Oil3 Tablespoons Chopped Anchovies0.5 Cup Tamarind Paste0.5 Cup Orange Juice2 Jalapenos1 Cup Dark Beer1 LemonIn a large pan, heat oil over medium heat and sauté onion for about 6-7 minutes. Stir in the tamarind paste, jalapeño peppers, ginger and garlic and cook for about 5 minutes. Add anchovies, lime, lemon, tomato paste, orange juice, beer, water, vinegar, molasses, corn syrup, cloves and black pepper and bring to a boil. Reduce heat to medium-low and simmer for about 2-3 hours, stirring occasionally. Through a fine mesh strainer, strain mixture into an airtight container. Refrigerate to preserve.
