In another bowl, mix together whole wheat flour, white flour and almonds saving 2 tablespoons of almonds for topping. In the bowl of yeast mixture, add ¼ cup of brown sugar and honey and stir to dissolve. Add eggs, buttermilk, butter, orange rind and salt and stir to combine. Add flour mixture and mix until a very soft dough is formed. Keep aside for about 10 minutes. Transfer dough to a generously floured surface and with your hands, knead for about 5 minutes or until an elastic but still soft and tender dough is formed, adding extra flour occasionally. Now, transfer dough to a greased bowl. With a plastic wrap, cover the bowl and keep in a warm place for about 2 1/2 hours. Meanwhile, for filling: In a bowl, mix together 1/2 cup of brown sugar, wheat germ and cinnamon. Once the dough is doubled, place on a lightly floured surface. Punch the dough down and pat into a rectangle of about 12x10-inch. Layer the rectangle with the brown sugar filling. Now roll the dough from smaller or 10-inch sides and make a ball-shaped loaf by folding the remaining two sides or 12-inch sides inward. Grease a baking sheet with oil or butter and place the loaf on the sheet. Coat loaf with some extra melted butter generously. Make a 2-inch wide and 36-inch long strip using a 36-inch foil piece. Then make a ring out of the strip using paper clips. Set the ring around the dough. With a plastic wrap, cover loosely and keep in a warm oven for about 1 hour. Preheat the oven to 350 degrees. Sprinkle loaf with remaining 2 tablespoons of chopped almonds. Bake for about 1 hour or until golden brown.
