1 Pound Wide Egg Noodles5 Cups Water4 Tablespoons Butter2 Cups Cottage Cheese2 Cups Sour Cream4 Large Eggs0.75 Cup Sugar2 Tablespoons Vanilla Extract1.5 Cups Corn Flakes0.5 Cup Golden Raisins2 Teaspoons Ground CinnamonPreheat oven to 350 degrees. In a large casserole dish, coat lightly with cooking spray and set aside.In a large saucepan, bring water to boil and cook noodles until al dente, about 5-7 minutes. Drain well, and rinse under cold water to stop the cooking process. In a large bowl, combine noodles, melted butter, cottage cheese, sour cream, eggs, vanilla, 1/2 cup sugar, and raisins. Mix well, and set aside for 5 mintutes. Meanwhile, in a medium bowl combine cornflakes, remaining sugar and mix well.Carefully transfer the noodle mixture to the prepared casserole dish, and smooth out with the back of a spoon. Sprinkle the ceral mixture over the surface of the noodles.Bake uncovered for 40-50 minutes, or until a knife inserted in the center comes out clean, and the kugel is golden brown and delicous.
