1.5 Cups Water0.75 Pound Pitted Dates1 Cup Vegetable Oil1.75 Cup Granulated Sugar0.75 Cup Honey3 Large Eggs2.25 Cups All-Purpose Flour3 Tablespoons Cocoa1.5 Teaspoon Baking Soda0.125 Teaspoon Salt5 Ounces Dark Chocolate0.5 Cup WalnutsPreheat oven to 325 degrees. In 2 loaf pans, line with parchment paper and lightly coat with cooking spray. In a saucepan over medium-high heat, bring water to a boil. In a medium bowl, combine the dates and boiling water and allow the dates to hydrate about 5 minutes.In the bowl of a food processor, add dates and water and puree into a soft paste. Stir in the oil, 1 1/4 cup sugar, honey and eggs and process until blended well.In a large bowl, add flour, cocoa, baking soda, and salt and whisk until blended. Add flour mixture slowly into the oil mixture, one cup at a time, and mix until just incorporated into a batter. Allow the batter to rest for 5 minutes, meanwhile combine the remaining sugar, chocolate, walnuts and stir to combine.Transfer the batter evenly between the 2 loaf pans, and sprinkle with the chocolate & walnut mixture.Bake the cakes until lightly brown and a inserted toothpick inserted in the middle comes out clean, about 50 minutes.
