3 Large Eggs0.66 Cup Sugar1 Teaspoon Vanilla Extract1.125 Cups All-Purpose Flour0.5 Teaspoon Baking Powder1 Teaspoon Lemon Zest0.66 Cup Unsalted Butter1 Tablespoon Granulated SugarIn a bowl, sift together 1 cup of flour and baking powder. In another large bowl, add sugar and eggs and with an electric mixer, beat until fluffy. Add zest and vanilla extract and mix well. Slowly, add flour mixture and gently, stir to combine.In a shallow dish, place a 1/2 cup of melted butter.Add about a spoonful or two of the flour mixture into the melted butter and stir to combine. Now, slowly fold the butter mixture into flour mixture. Refrigerate, covered for one hour or longer.Preheat the oven to 400 degrees. Grease the Madeleine froms with remaining 2 tablespoons of melted butter generously and then, dust with 2 tablespoons of flour. Tap out the excess flour and refrigerate the pans about five to ten minutes.Place about a generous tablespoon of mixture into each mold (do not spread mixture).Bake for about ten minutes or until light golden brown.Remove from the oven and keep onto a wire rack to cool slightly. Carefully, tap the pans onto a counter to loosen the cakes. Serve warm with the dusting of granulated sugar.
