0.5 Cup All Purpose Flour3 Eggs0.5 Cup Yellow Cornmeal1 Pound Green Tomatoes0.25 Teaspoon Kosher Salt & Freshly Ground Pepper8 Slices Of Texas Toast8 Slices Of Thickcut Bacon4 Leaves Boston Bibb Lettuce0.5 Cup Canola Oil4 Tablespoons MayonnaiseIn three separate bowls, place flour, cornmeal and eggs respectively. Coat the tomato slices with flour, then dip into eggs and finally, coat with cornmeal evenly. In a large skillet, heat oil over medium-high heat and fry the tomato slices in batches for about one to two minutes per side. Transfer the tomato slices to a paper towel-lined plate to drain. Season immediately with salt and pepper. Spread a thin layer of mayonnaise on a slice of bread; top with lettuce, fried green tomato, bacon and remaining bread slice. Cut in half and serve.
