Smart Recipes, American Recipes, Other Recipes, Recipes Other American Vegan-Style Eggnog Vegan-Style Eggnog Recipe | PT15M Serves 8 Ingredients: 24 Ounces Extra-Firm Silken Tofu 2 Cups Soy Milk 0.33 Cups Light Brown Sugar 0.25 Teaspoon Salt 1 Cup Water 1 Cup High Quality Brandy 1.5 Tablespoons Pure Vanilla Extract 20 Large Ice Cubes 1 Teaspoon Ground Nutmeg In a blender, add crumbled tofu, soy milk, sugar & salt and blend until velvety smooth. In a large bowl, pour tofu mixture and whisk in water, liquor and vanilla. Cover and refrigerate for at least 1 hour. In the same blender, pour half of the tofu mixture and add 10 ice cubes. Blend until mixture is frothy. Transfer mixture to a pitcher. Repeat with the other half. Divide eggnog among 8 glasses with a sprinkle of nutmeg on top.
