Dry potatoes with a paper towel. Chop potatoes into bite-sized pieces. In a large skillet, heat olive oil over medium heat. Add potatoes to heated skilled, turning down the heat to the lowest setting. Allow the potatoes to cook for a few minutes. Remove potatoes and cool them in the refrigerator for several minutes.
