1 Lemon2.25 Teaspoons Salt1 Pound Extra-Large Peeled And Deveined Shrimp2 Cups Fresh Basil Leaves12 Walnuts0.5 Cup Extra-Virgin Olive Oil1 Teaspoon Shallot5 Cups Baby Arugula3 Cups Frisee1 Cup Radicchio0.125 Teaspoon Freshly Ground Black PepperFill a large pot one-third of the way full with water and add thinly sliced lemon and 1 1/2 teaspoons salt; bring to a simmer. Add shrimp and cook for 3 minutes or until opaque and drain. Using a food processor, add basil, 12 walnuts, lemon peel, and 3/4 teaspoon salt and pulse until finely chopped. Gradually add olive oil while continuing to pulse. Transfer mixture to a salad bowl. Add shallot, baby arugula, frisee, raddicio and toss. Season with season with salt and pepper and top with the shrimp.
